It’s the holidays and as work and school are winding down, gift-buying, present wrapping, traveling and party-planning are winding up! I have not blogged in a while because I was swamped with finals and yesterday I got a wisdom tooth out. So in the past 24 hours I have been spending a lot of time on the couch with a swollen face:
Needless to say, between the stress and limited eating I was feeling pretty drained. My sister arrives in Paris tomorrow, however, (yayy!) and there is a lot to do before she gets here. I needed an energy boost.
This smoothie is awesome for the winter because not only does it have a lot of healthy ingredients like spinach and banana to get you ready for those crazy holiday meals, but it also tastes like a delicious snickerdoodle and gets you in the holiday spirit.
Recipe:
- 1 cup almond milk (or other non-dairy milk, but almond will give it a nice nutty undertone)
- About 2 cups (or two handfuls if you are eye balling it) of spinach leaves
- 1 Banana
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- Sugar to taste (or a sugar substitute like agave syrup, maple syrup or stevia)
Blend on high for about 1 minute, until all the spinach leaves are pulverized to a delicious smoothie form that doesn’t taste like spinach!
Pour into a glass and drink up!
