What goes well with sweet potato & cashew dip?

Pita chips!! Of course, they don’t sell pita chips in Paris, so I made them myself. It’s actually extremely easy and fun to do…

First, find some pita. I found some in my local Franprix. Next, make four slices across the pita, cutting it into eighths. From there it’s up to you if you want to separate the top from the bottom layer… I did because thinner = crunchier. Pre-heat your oven to 200°C  (400° F).

Now mix the disassembled pita in a large bowl with plenty of olive oil, dried basil and salt. The amount is up to you, I used a ton of basil, but you could also probably add some other spices like garlic salt, pepper or paprika.

Bake the now seasoned & oiled pita on a baking sheet for about 8 minutes, but keep an eye on them because burnt chips are gross.

Once they are ready you can serve with hummus, sweet potato & cashew dip, or eat them alone. I assembled a delicious vegan dinner plate of quinoa & dill peas, salad w/ hummus, sweet potato & cashew dip and the chips! Filling and wonderful!
