A quick vegan dinner – spicy chickpeas


Do you ever feel like just mixing some foods together even though you have no idea how it’s going to turn out? I do this pretty frequently and I will admit – usually it’s a disaster. Last night it worked out though! I had seen a few chickpea recipes lately and had a can in my cupboard begging to be used. Since none of the ingredients were expensive, I was not too worried about totally messing it up and not being able to eat all of it.

1/2 can of chickpeas
2 tbs of tomato paste
1/2 diced red onion
1-2 tbs olive oil
Tabasco sauce (to spiciness liking)

Obviously if you were to make a whole can the ingredients would work out a little more evenly, so if you are into big servings/ have a family to feed, go for it. This would all go excellent over white rice.

Instructions: Dice up the red onion and put it in a pan with some oil over med-low heat. Throw in the chickpeas, tomato paste and add Tabasco sauce to taste. Cook until chickpeas are warm and toasty throughout. See, simple! And vegan!
